Miracle Coconut Cake

I KNOW JESUS LIKES COCONUT CAKE!

Ok, funny story…my husband had his birthday in February.  And every year for his special day I make a Boston Cream Cake with fudge icing.  However, we were having company on his birthday and he asked me to make the cake later in the week, so he didn’t have to share.  I agreed and thought I would make a coconut cake for the party instead.  The coconut cake recipe would be inspired by the fabulous version from Vons Bakery.  Our nephew Christopher’s fiancé, Claudia works at Vons in the bakery and she makes the best cakes, ever!

However, I planned on making the cake myself and was stressing about it.  The night before the cake project, I dreamed about how to make the cake.  But I was obsessed in the dream with how to accomplish the desired confection.  Should I make two layers (or opt for one because its easier); what kind of icing (cream cheese or plain white); what cake pans should I use?  And the biggest issue was how can I get all that lovely coconut onto the outside of the cake with my funky hands!   I literally was tossing all night about this cake and talking to God about it.

Morning came and I was exhausted, how am I going to make this cake now?  Still praying about this darn cake when husband tells me our nephew is coming for the day and his Beloved is sending me the coveted Vons coconut cake!  I was beside myself with joy.  But another sweet surprise was minutes away.

Then, husband returns to my prayer closet to tell me another friend, Tony, was bringing the same coconut cake from Vons, only a much larger size of the cake!  Now, I KNOW Jesus likes coconut cake as much as I do…sweet Savior! 

Here is a picture of the blessed confection taken by my friend Francine after I told her of the cake…this was the first time she tried it😊   Look at how she’s framed it with white hydrangeas, simply, perfection!
